avocado tuna sandwich

I love open faced sandwiches. Well lets be real, I love all sandwiches!
I especially love easy meals/sandwiches! And this one is very easy. One can of tuna plus 1 avocado smashed and mixed together. That’s it! I just toasted up some whole wheat english muffins and topped them with tomato slices.
Morgan isn’t really a fan of tuna OR avocado but I forced/begged him to try this and he didn’t hate it! He has a bit of a hard time admitting he likes something especially once he’s made a big stink about how much he hates it! I take this one as a win.

raw till 4 dinner

I threw this together while making Morgan his dinner. I made him chicken with rice and steamed broccoli on the side. 
So for my dinner… I chopped up some romaine lettuce, scooped some of the rice and broccoli on there. Topped that with some sliced grape tomatoes and salsa. It was really tasty, I really enjoyed the cooked and fresh combo in this meal! And its really pretty… gotta love that

taco salad

Mexican food is my jam!!! This time I made a yumE yum salad. This is so easy to throw together and you know me and my easy to make food recipes. That’s ALSO my jam.
I make a delicious mix of rice, beans (kidney, black and/or chickpeas), 1 can of diced tomatoes, corn, cumin and chili powder. I cooked up the brown rice according to the package, then mixed the rice and the rest of the ingredients in a pot over the stove until it was all heated through. 
I put shredded lettuce in the bottom of a bowl, scoop some of the rice/bean mixture in the top it with tomato, tortilla chips and sour cream then chow the heck down!!   
I’m forced to pretty much only eat homemade Mexican food because boyfriend isn’t the biggest fan of it. BUT he does like it when I make tacos and the last time we went to a Mexican restaurant he didn’t throw a fit. Baby steps but I’ll convert him sooner or later!!

baked portobello and egg burger

Babes and I love burger night. He of course makes a regular cheese burger but I love to get creative. I’ve done salmon burgers, crab cake burgers, regular portobello burgers. 
This time I wanted to get crazy so I took a portobello mushroom cap and marinated it in balsamic and olive oil for about a half hour. With the oven preheated to 400 degrees I put the mushroom cap gill side up in a baking dish and cracked an egg on top. Baked it for about 20-25 minutes or until yolk is set. To assemble I took a delicious bakery bun then spread half with goat cheese and half with mustard. Then lettuce, tomato and the mushroom. While this burger was delicious it was messy, BUUUT that is A-OK with me!! 
This night we made a side of roasted potatoes to go with our burgers. I just tossed chopped potatoes in olive oil, s&p and baked at 450 degrees for 60 minutes. Tossing half way through. I think roasted potatoes are our favorite way to eat potatoes. So easy and delicious
